How are you all ? I know i haven't posted any recipes lately but i was enjoying these sunny days. Hope you are enjoying them too !!.

So hope you forgive me :)
But now back to work. Many of you this time of year on Wednesday & Friday don't eat MEAT. This is very annoying for the person that has to cook grrrrrrrr. So i will try to post some recipes without meat.
The first Recipe i know i already did it but this one even if without meat it's really good
Veggie Lasagna
for 4 persons
Lasagna sheets green & some normal ones (white)
1 Onion
2 Cloves of Garlic
500 grams Rikotta
6 Spinich cubes ( if small )
1/2 Jar of Polpa
2 tablespoons of Tomato Paste (kunserva)
1 vegetable cube
1 glass of red wine
1 tablespoon of Sugar
1 Fresh Cream
Mozzarella shredded
Some milk
Chop the onions and the garlic and cook until golden, add the polpa , the tomato paste,shred the vegetable cube, sugar and the glass of wine. Mix well and let it simmer for 10 mins on medium heat.
Preheat oven 180 degrees
While the sauce simmers get the defrosted spinach and cut them into smaller pieces then in a bowl mix together with the rikotta and mash them. When ready add it to the sauce. Now you should have more rickotta then polpa if not let it simmer more, you want to taste the spinach and rikotta in the lasagna not only the polpa :).
Now grab a medium sized dish and start laying the sheets mine only take 3 sheets 2 horizontal and 1 diagonal . Start with the green sheets then pour some of the mixture on it then some mozzarella and some cream and repeat with the white sheets and again remember you have to end up with the sauce on top. Do the same use the mozzarella on top. Now from the corners of the dish pour some milk.
Put your delicious Veggie Lasagna in the oven for about 20 to 30 mins or till the milk is gone and the top is golden :)
